Analytical verification of product identity and traceability is a fundamental aspect of consumer health protection.
Background
The BfRshort forGerman Federal Institute for Risk Assessment is involved in the development, validation and evaluation of analytical strategies and methods for verifying identity and authenticity. In addition to routinely used methods such as stable isotope analysis, the BfRshort forGerman Federal Institute for Risk Assessment strives to develop and establish innovative analytical strategies (e.g. NMR, FT-IR profiling, fingerprinting using high-resolution LC-MS and GC-MS).
On the one hand, changes can be detected with regard to the authenticity of the food (type, origin, production, etc.). In addition, the comprehensive analysis also makes it possible to detect manipulations that are harmful to health or relevant to safety (‘exogenous’ non-food signals).
