Description and Objective

The aim of the project is to determine the occurrence, introduction, and persistence of bacterial zoonotic pathogens within the flour production chain, with a particular focus on Shiga toxin-producing Escherichia coli(STECshort forShiga toxin-producing Escherichia coli). Data regarding the interplay of soil factors (such as soil characteristics and microbiome), climatic conditions and extreme weather events, as well as the virulence, pathogenicity, and metabolic properties of E. coli—specifically STEC—will be used for a detailed risk assessment and, consequently, for consumer protection.
