The risk to human health is assessed for three types of substances in foods:

  • Food ingredients
  • Food additives
  • Residues and contaminants

The basis for the health assessment of substances in foods is always the respective international level of scientific knowledge. The assessment of the health risk from a substance is, therefore, a dynamic, ongoing process. New toxicological findings also lead to changes in the assessment of substances.
